Guacamole

Ingredients: 1 Guacamole  Juice of 1 Slice of Lemon Directions: 1) Blend ingredients in food processor. 2) Enjoy! Storage: In refrigerator up to 3-5 days.

Avocado Salad

Serves: 4, Prep time: 10 Minutes. Ingredients: 1 Avocado 2 Medium tomatoes 2 Medium cucumbers 1/3 Cup Mint leaves, fresh 1/2 Lemon, Fresh 1/4 Cup Extra Virgin Olive Oil Directions: 1) Chop avocado, tomatoes, cucumbers. 2) Dice Mint leaves. 3) Juice the lemon. 4) Mix avocado, tomatoes, cucumbers in medium-sized bowl. 5) Add olive oil and pour juice of lemon on top. 6) Top with mint leaves, then serve.

Make your own Trail Mix

Take dry ingredients such as nuts and raisins you already have in your kitchen and make your own Trail Mix! Here is my recipe: Ingredients: Makes about 2 cups. 1 Cup dry roasted peanuts, unsalted 1/4 Cup sesame seeds, unsalted 1/4 Cup craisins, dried 1/4 Cup crushed walnuts, unsalted 1/2 Cup chocolate covered raisins  Directions: 1) Mix ingredients. 2) Pour into a container which can seal 3) Enjoy. 4) Store and seal at room temperature.

Snack with Wasa Crackers

About this recipe: "This makes a simple, yet healthy and delicious snack." Serves: 1, Prep: 5 minutes. Ingredients:  2 Whole Grain Wasa Crackers 1/2 ounce, fresh avocado  1 small, fresh tomato 1/2 Ounce Colby Jack Cheddar Cheese Directions:  1) Chop avocado, tomato, and cheese. 2) Place ingredients on Wasa cracker. 3) Enjoy.

Whole Grain Pasta Salad

Serves: 4, Prep: 10 mins.   Ingredients: 3 Medium tomatoes (diced) 2 Ounce Fresh Mint  Leaves  (diced) 2 Ounce Fresh Basil Leaves  (diced) 1 Ounce Onion  (diced) 2 Ounce Olive Oil  1 Cup Whole Grain Pasta 1 Pinch Oregano 1 Pinch Black pepper 1 Pinch Garlic powder Directions: 1) Cook pasta 2) Dice tomatoes, mint, basil, onion. 3) Strain cooked pasta in colander. 4) Tomatoes, mint, basil, onion, and pasta in bowl. 5) Add olive oil, garlic powder, black pepper, and dried oregano then serve.

Honey Vanilla Lemonade with Mint

Serves- 1, Prep time- 5 minutes Ingredients: -  1 Tbsp Lemon Juice -  1 Tbsp Honey -  2 drops Vanilla Extract -  8 Fresh Mint Leaves -  1 Cup Ice -  1 Cup Water -  1 Ounces Fat Free Milk Directions: 1) Boil water. 2) In a drinking glass: Pour in vanilla extract, honey, fat free milk, and hot water. 3) Stir ingredients for 30 seconds in drinking glass. 4) Add lemon juice, then add ice and mint leaves. 5) Stir immediately again for 30 seconds then serve. Add additional ice if preferred. Please note:  Lemon Juice + milk makes buttermilk. To prevent this from occurring, follow directions in order.
