Chicken Enchilladas

Ingredients:
  • 1 can concentrated cream chicken soup
  • 1 cup picante sauce
  • 1/2 cup sour cream
  • 2 tsp chilli powder
  • 2 cups chopped cooked chicken
  • 1/2 cup shredded mozzarella cheese
  • 6 flour tortillas
  • 1 green onion (diced)
  • 1 small tomato (diced)
Directions:
  1. Preheat oven to 375 degree fahrenheit
  2. Add soup, picante sauce, sour cream, and chilli powder together in a medium sized bowl
  3. Mix ingredients together then divide in half
  4. Divide wet ingredient mixture in half and set aside
  5. Spray an 8 by 13 inch baking dish with cooking spray then roll half of wet ingredients, cheese, and chicken into each tortilla proportionally with fold down
  6. Spread other half of cheese and wet ingredients on top
  7. Place in oven for 30 minutes
  8. Add green onion and tomato on top then place in oven for an additional 10 minutes
  9. Cool for 5 minutes then serve

Ingredients: 1 Avocado 2 Medium tomatoes 2 Medium cucumbers 1/3 Cup Mint leaves, fresh 1/2 Lemon, Fresh 1/4 Cup Extra Virgin Olive Oil Directions: 1) Chop avocado, tomatoes, cucumbers. 2) Dice Mint leaves. 3) Juice the lemon. 4) Mix avocado, tomatoes, cucumbers in medium-sized bowl. 5) Add olive oil and pour juice of lemon on top. 6) Top with mint leaves, then serve.
